Steakhouse Mash Potato Puffs

Ingredients:

  • 2 large eggs

  • 1/3 cup sour cream

  • 1 teaspoon steak seasoning

  • 1 ½ cups shredded cheddar cheese

  • 2 tablespoons shredded Parmesan cheese

  • 3 cups mash potatoes (ready to eat store bought or homemade mash potatoes)


Toppings:

  • Sour cream

  • Creamy horseradish sauce

  • Chopped green onions

  • Fresh or dried chopped chives

  • Fresh or dried parsley


Directions:

1. Preheat oven to 400 degrees F. Place muffin or cupcake liners in respective pans and brush with melted butter. If you are out of liners, see my hack how to make parchment paper muffin or cupcake liners.

2. Using a large bowl whisk the eggs. Add sour cream and steak seasoning, whisk until combined. Add cheddar cheese, Parmesan cheese and mash potatoes, whisk until well combined.

3. Spoon mixture into prepared muffin or cupcake pan, filling just below each top. Bake for 35-45 minutes or until a knife inserted in the middle comes out clean. Remove from oven and let pan cool. Remove the liners and top with your desired toppings.


Notes: You can also use any kind of small oven proof bowl such as a Ramekin. Or even silicone muffin liners by themselves.
