Ingredients:
2x 8 ounces cream cheese, room temperature
1/4 cup mayonnaise
1/4 cup sour cream
1/4 teaspoon cayenne powder
1/4 teaspoon garlic powder
2 tablespoons green onion, green part only, chopped
2 cups Monterey Jack cheese, shredded
6 ounces smoked oysters, chopped into bite size pieces
Topping:
2 tablespoons butter, melted
2/3 cup white cheddar Cheez-It crackers, mostly crushed, leaving parts of cracker
2 tablespoons Parmesan cheese, shredded
Directions:
1. Preheat the oven to 350 degrees F.
2. In a large bowl, add cream cheese, mayonnaise, sour cream, cayenne powder and garlic powder. Stir well for a few minutes making sure all is incorporated. Stir in green onion and Monterey Jack cheese. Stir in chopped smoked oysters. Add mixture to an 8 inch x 8 inch oven proof pan.
3. In a separate medium bowl, combine melted butter, crushed Cheez-It crackers, and parmesan cheese. Spread evenly over the top of the dip. Cover pan with aluminum foil.
4. Bake for 40 minutes. Remove the aluminum foil and cook for 5 more minutes. Remove pan from oven to a wire rack. Serve warm.
Note: Dip: Crackers or chips. Spread: Sliced baguette, toasted and buttered (our favorite). On romaine or lettuce leaf.
