Irish Pub Baked Potato Slices Hamburger Nachos

Ingredients:

  • 2 pounds Russet potatoes (about 1 medium and 2 large potatoes)

  • 3 tablespoons neutral tasting olive oil, plus 1 additional tablespoon for the frying pan

  • 1 pound hamburger

  • 2 tablespoons pot roast seasoning

  • 2 tablespoons taco seasoning

  • 3 cups shredded cheddar cheese

  • 1 cup Pico de Gallo

  • 1 can (2.25 ounce) sliced black olives

  • 1/3 cup pickled jalapenos


Toppings:

  • Sour cream

  • Guacamole


Directions:

1. Position 2 oven racks to hold 2 baking sheets. Preheat oven to 400 degrees F. Line 2 baking sheets with aluminum foil.

2. Rinse and pat dry the potatoes. You can keep the skin on or peel the potatoes (we like to do half on and half peeled). Slice the potatoes into ¼ inch thick medallions. Place the sliced potatoes in a large bowl, drizzle the 3 tablespoons of olive oil over the top and toss well to coat. Place the potatoes, in a single layer on the 2 prepared baking sheets.

3. Bake for 25 minutes, remove baking sheets from the oven. Turn the potatoes over. Return baking sheets to the oven, place the top baking sheet to the lower rack and the lower rack baking sheet to the top rack. Bake for an additional 20-25 minutes or until potatoes are brown and crispy, but yet still soft in the middle. Remove baking sheets from oven, lightly salt potatoes and let cool.

4. Using a large frying pan on medium heat, add the 1 tablespoon of olive oil and the hamburger. In a small bowl combine the pot roast and taco seasonings. Sprinkle the combined seasoning over the top of the hamburger. Using a wooden spoon or wooden spatula, work the seasoning into the hamburger. Break up the hamburger into small chunks and cook until brown and caramelized. Drain the frying pan and set aside to cool.

5. Preheat oven to 350 degrees F. Using an oven proof bowl, dish or pan (such as a 10 by 10 inch or even a large casserole pan works). Layer half of the potatoes in the bottom. Top with half of the hamburger, cheese, Pico de Gallo, olives and the jalapenos. Layer over the top the remaining potatoes, hamburger, cheese, Pico de Gallo, olives and jalapenos. Bake for 15-20 minutes or until the cheese is all melted. Remove from oven. Serve with sour cream and guacamole.
