Tex Mex Cherry Tomato Salad

Ingredients:

  • 2 x packages cherry tomatoes, 10 ounces each, each tomato cut in half

  • 1 cup Pico de gallo, drained

  • 1 can sliced black olives, 2.25 ounces, drained

  • 1 cup canned corn, drained

  • 1 cup canned pinto beans, drained

  • 2 cups Queso Fresco cheese cut into bite size cubes

  • 2 tablespoons olive oil

  • 1/4 teaspoon garlic powder

  • 2 teaspoons chili powder

  • 1 tablespoon True Lime crystals

  • 1 avocado cut into bite size cubes and sprinkled with lime juice

  • 1 cup partially crushed Fritos or Doritos


Directions:

1. In a large bowl combine cherry tomatoes, Pico de gallo, black olives, corn, pinto beans, and Queso Fresco cheese.

2. Drizzle olive oil over the top. Sprinkle garlic powder, chili powder, and True Lime crystals on top then toss to combine. Add avocado and toss to combine. Add Fritos or Doritos to the top and serve.

Serve with more Fritos or Doritos and True Lime crystals to taste per serving.
