Southwest Hash Brown Breakfast Pie

Ingredients:

  • 4 cups frozen hash browns, then thawed

  • 1/3 cup butter, melted

  • 1/2 cup whole milk

  • 6 large eggs

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/4 teaspoon cayenne powder

  • 1 can (4 ounces) green chilis

  • 1/2 cup diced tomatoes

  • 1/4 cup diced onions

  • 1 cup fully cooked breakfast sausage patties or links, chopped into bite size pieces

  • 1 1/4 cup shredded cheddar cheese

  • 1 1/4 cup shredded pepper jack cheese

Directions:

  1. Preheat oven 425 degrees F. Grease a 10 inch pie plate with butter. Press the hash browns to the bottom of the pie plate. Brush the melted butter over the hash browns. Bake for 25-30 minutes. Remove pie plate from oven and reduce the temperature to 350 degrees F.

  2. In a large bowl using a whisk, beat the milk and eggs together. Whisk in salt, black pepper and cayenne powder.

  3. Stir in green chilis, tomatoes, onions and sausage. Stir in cheddar cheese and pepper jack cheese. Pour mixture over hash browns in the pie plate, bake for 50-55  minutes or until a knife inserted in the middle confirms the egg mixture is done. Remove to wire rack to cool.


Leftover idea: Makes a great breakfast burrito with sour cream and salsa.
