Smoked Salmon Bagel and Cream Cheese Salad

Ingredients:

For the Croutons:

  • 3 medium size plain bagels, cut into bite size cubes

  • 3 tablespoons olive oil

  • 3 tablespoons melted butter, then slightly cooled

  • 2 tablespoons everything but the bagel seasoning

Salad dressing:

For the Salad:

  • 1 bag (9 ounce) pre made iceberg, romaine, carrots, red cabbage and radish salad

  • 1 bag (5 ounce) pre made baby spinach salad

  • Cherry tomatoes (10 ounces) sliced in half

  • 1/4 cup red onion, thinly sliced and then chopped

  • 1/4 cup green onion, chopped

  • 1 cucumber, skin removed, deseeded and then cut into bite size cubes

  • 2 tablespoons dill weed

  • 1 large avocado, pitted, skin removed and then cut into bite size cubes

  • Cream cheese (8 ounces) cut into bite size cubes

  • 2 tablespoons everything but the bagel seasoning

  • Smoked salmon (12 ounces) skin removed, chopped

  • Lemon or lime wedges

Directions:

1. Preheat oven to 350 degrees F. Line a baking sheet with non stick foil or parchment paper. Add bagel cubes to a medium size bowl. In a small bowl combine the olive oil and butter, drizzle over the bagel cubes and then toss to coat. Sprinkle the 2 tablespoons everything but the bagel seasoning over the top and then toss to combine. Transfer the bagel cubes evenly to the prepared baking sheet and bake for 15 minutes, remove from oven and let completely cool. After cooled you might want to hide the bagel croutons because your family or guests will devour them. The bagel croutons are addicting!

2. In an extra large bowl add the pre made salads, cherry tomatoes, red onion, green onion, cucumber, dill weed and then toss to combine. In a small bowl add the remaining 2 tablespoons of everything but the bagel seasoning. Using only about 8 to 12 cream cheese cubes, dip one side in the seasoning so that the seasoning sticks to the cream cheese. Add the avocado, cream cheese and smoked salmon to the salad bowl and gentle toss to combine.

3. With each individual serving, serve with the bagel croutons, avocado salad dressing and lemon or lime wedges.
