Pumpkin Spice Oatmeal Milk Chocolate Toffee Cookies

Ingredients:

  • 2 ¼ cups all-purpose flour

  • 2 teaspoons pumpkin pie spice

  • 1 teaspoon ground cinnamon

  • 1 teaspoon baking soda

  • ½ teaspoon salt

  • 1 cup butter, room temperature

  • 1 cup packed brown sugar

  • ½ cup granulated sugar

  • 2 large eggs

  • 1 tablespoon vanilla extract

  • 1 cup pumpkin puree

  • 2 cups old-fashioned rolled oats

  • 1 package (11.5 ounces) milk chocolate chips (about 2 cups)

  • 2 cups Heath Milk Chocolate English Toffee Bits *see notes after recipe

Directions:

1. Preheat oven to 350 degrees F. Line the bottom of a baking sheet with parchment paper.

2. Using a large bowl whisk together flour, pumpkin pie spice, cinnamon, baking soda and salt.

3. Using a separate large bowl beat butter, brown sugar and granulated sugar until creamy. Beat in eggs one at a time. Stir in vanilla extract and pumpkin puree until combined.

4. Stir in the dry flour ingredients to the wet pumpkin ingredients until combined. Stir in the old-fashioned rolled oats until combined. Stir in milk chocolate chips and the Heath toffee bits until combined.

5. Drop ¼ cup of dough per cookie to the prepared baking sheet at least 2 inches apart. Flatten each cookie down slightly using a flat rubber spatula. Bake for 15-16 minutes, remove baking sheet from oven and let cookies cool for 8 minutes before transferring them to a plate.


Notes: Heath Milk Chocolate English Toffee Bits or Heath English Toffee Bits Enrobed In Rich Chocolatey Coating are sold in 8 ounce packages in the grocery baking isle near the chocolate chip section. So you will need to buy 2 packages in order to have the 2 cups for this cookie recipe.

If your local store doesn’t carry the Heath toffee baking packages you can buy the Heath candy bars (English Toffee Enrobed In Rich Chocolatey Coating) in the candy section. Roughly chop the candy bars, into about the size of a small pea. A lot of the toffee and chocolate will end up becoming small pieces or almost dust, which is all good to use toward the 2 cups required for the recipe.
