Ingredients:
4 cups (peeled, pitted, sliced) and then chopped peaches
1 1/2 tablespoons lemon juice
1 teaspoon vanilla extract
1 tablespoon Cornstarch
Crisp Topping:
1/2 cup all-purpose flour
1/2 cup brown sugar
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup cold butter, cut into small cubes
1 cup old-fashioned oats
Directions:
1. Preheat oven to 400 degrees.
2. Using a large bowl, add peaches, lemon juice and vanilla extract. Using a flat rubber spatula, stir until combined. Sprinkle the cornstarch over the top of the peaches and stir until well combined. Add peach mixture evenly to an 8 inch x 8 inch baking pan, set pan aside for later.
3. Using a separate large bowl, whisk together the flour, brown sugar, cinnamon and salt until combined. Using your fingers, work in the cold butter cubes into the flour mixture until the butter resembles about pea size pieces. Add old-fashioned oats to the flour mixture until combined. Crumble mixture evenly over the top of the peaches in the prepared 8 inch x 8 inch baking pan.
4. Bake for 30 minutes or until peach mixture is bubbling and the topping is golden brown. Remove pan to a wire rack to cool. Serve with vanilla ice cream or whipped cream.
Notes: You can use canned peaches, use a colander or strainer to drain excess juices. Also frozen peaches work as well. Allow the frozen peaches to thaw completely in a colander or strainer to drain excess juices.
