Jr. Mint and Mint Oreo Cookie Bark

Ingredients:

  • 40 Saltine Crackers

  • 3/4 cup butter

  • 3/4 cup granulated sugar

  • 1 cup semi-sweet chocolate chips

  • 1 cup Jr. Mints, chopped

  • 1/4 cup water, plus more if needed

  • 15 Mint Oreo cookies, chopped into very small bite size pieces, center filling and all

Directions:

1. Preheat oven to 400 degrees F. Line a 17 inch x 11 inch baking sheet with aluminum foil, wrapping foil completely over the sides. Lightly spray foil with cooking spray.

2. Lay saltine crackers evenly over the foil, salted side down.

3. In a medium size saucepan on medium heat, melt butter. Add granulated sugar stirring occasionally until sugar dissolves, about 5 minutes. Drizzle evenly over the saltine crackers. 

4. Bake for 10 minutes, remove from oven.

5. In a medium size saucepan on medium heat: add water, chocolate chips and Jr. Mints. Stir occasionally until all melted, adding a little more water as needed until combined. Pour over the Saltine Crackers and spread evenly using a spatula. Sprinkle Mint Oreos evenly over the top and gently press into chocolate. 

6. Let cool for 30 minutes, transfer baking sheet to the refrigerator and let cool for 2 hours. Remove from refrigerator and break into pieces. 

Notes: Chopping Mint Oreo cookies can be a mess. Use a separate baking sheet, twist each cookie apart from each other trying to keep filling on each separated cookie. Using a knife chop cookie into small bite size pieces. Use the bottom of an 8 inch x 8 inch clear baking pan to press the Mint Oreo cookies into the chocolate.
