Jalapeño Popper Dip

Ingredients:

  •  16 ounces cream cheese, room temperature

  • 1/2 cup of mayonnaise

  • 1/2 cup sour cream

  • 1 teaspoon garlic powder

  • 1 teaspoon of cracked black pepper

  • 4 medium size jalapeños, finely chopped and deseeded (For medium spicy heat, use 3 jalapeños with seeds, the rest deseeded)

  • 1/2 cup of cheddar cheese, shredded

  • 1 cup of mozzarella cheese, shredded

  • 3/4 cup green onion, chopped

  • 6 slices of bacon, fully cooked and crispy

Topping:

  • 6 tablespoons of butter, melted

  • 2 1/2 cups Ritz crackers, lightly crushed, leaving some parts of cracker 

  • 1/2 cup parmesan cheese, shredded

Directions:

1. Preheat the oven to 350 degrees.

 2. In a large bowl, combine cream cheese, mayonnaise, sour cream, garlic powder, black pepper and jalapeños. Stir well for a few minutes making sure all is  incorporated.

3. Add cheddar cheese, mozzarella cheese, green onion, and bacon to the cream cheese mixture and stir until combined.

4. Add mixture to a 7 inch x 11 inch oven proof pan. You can use a different type pan, just make sure the dip is at least 1 inch thick.

5. In a separate medium bowl, combine melted butter, Ritz crackers, parmesan cheese, and spread over the top of dip.

6. Cover pan with foil, cook for 45 minutes. Remove the foil and cook for 10 more minutes until the Ritz cracker topping is crispy.


Leftover ideas: Goes great on a baked potato or breakfast hash browns. Put on a hamburger or spread for a sandwich. Add it to the middle of your grilled cheese sandwich.
