Avocado Lime Chicken Salad Sliders

Ingredients:

  • *1/4 teaspoon green chili pepper flakes (we used Flat Iron Pepper Co. Hatch Valley Green)

  • 1/8 teaspoon dill

  • 1/4 teaspoon salt

  • 1/8 teaspoon black pepper

  • 3/4 cup mayonnaise, plus extra for slider buns

  • 2 small avocados, cut into bite size cubes and sprinkled with a little lime juice

  • 1/3 cup green onions, chopped

  • 2 cups cooked chicken, chopped into small bite size cubes 

  • fresh lime juice, about 3/4 of a lime

  • 12 slider buns

  • 12 thin slices pepper jack cheese to fit on slider buns

  • True Lime crystals (optional)

  • 2 Roma tomatoes, cut into 12 thin slices to fit on slider buns

  • 12 small lettuce leaves to fit on slider buns

Directions:

1. In a medium bowl, combine the green chili pepper flakes, dill, salt, black pepper and mayonnaise. Add about 1/4 cup of the avocado cubes and mash with a fork, then stir into the mayonnaise mixture.

2. Add the remaining avocado cubes, green onion and chicken. Sprinkle the lime juice over the top and gentle stir until all combined.

3. Cover the bowl with plastic wrap and refrigerate for at least 1 hour or longer so that the flavors all meld together and mixture has a chance to set up.

4. Spread a thin amount of mayonnaise on each of the slider buns, add pepper jack to each of the lower half of each bun. Top with Chicken salad, sprinkle with True Lime crystals over the top. Top each with tomato slices, lettuce and then the top half of the bun. 

Notes: With the leftover chicken salad, serve on crackers or a toasted baguette, lettuce wrap or on top of a salad (perfect for a taco salad). Treat yourself sometime and try 2 cans of Wild Planet organic roasted chicken breast for this recipe. We were skeptical at first of canned chicken, but Wild Planet it is so good and tender. True Lime crystals and other products we mentioned can be bought online. 

*We like Flat Iron Hatch Valley Green. A great quality green chili pepper flake that also has a small amount of jalapeño and habanero in it. As a substitute you can use red chili pepper flakes.
